Scrambled eggs with potatoes wrapped in warm tortillas are a classic Mexican breakfast taco. This high protein, vegetarian, family-friendly dish is a fresh, healthy, filling morning meal.
Peel and dice the potatoes into small cubes for even cooking. Finely chop the onion.
Heat vegetable oil in a large non-stick skillet over medium heat. Add the potatoes and onions, seasoning with half the salt and pepper. Cover and cook, stirring occasionally, for 10–12 minutes, until the potatoes are golden and fork-tender.
While the potatoes cook, crack the eggs into a bowl. Whisk them with the remaining salt and pepper until well combined.
Reduce the heat to medium-low. Pour the beaten eggs evenly over the cooked potatoes and onions. Let set for 30 seconds, then gently fold to scramble until the eggs are just set but still moist, about 2–3 minutes.
Warm the corn tortillas on a dry skillet over medium heat for 30–60 seconds per side until pliable.
Spoon the egg and potato mixture evenly into each warm tortilla. Sprinkle with chopped cilantro and serve immediately.
