Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
In a large bowl, whisk the egg whites thoroughly until slightly frothy for even texture.
Pour the egg whites onto the parchment, spreading into thin 2-inch circles with a spoon, about ⅛ inch thick.
Lightly mist each egg white circle with olive oil spray and sprinkle salt evenly over the surface.
Bake for 16–18 minutes on the middle rack, monitoring closely in the last 2 minutes to prevent over-browning. Remove crisps immediately when golden and fully dry.
Cool crisps on a wire rack for maximum crunch before enjoying.
