Elegant jasmine tea jelly with delicate floral aroma and light sweetness is a refined dessert. A family recipe with fresh, aromatic jasmine flavor.
Bring 2 cups water to a near boil (about 190°F), then remove from heat. Steep 2 tbsp jasmine tea leaves in the hot water for 4 minutes, then strain carefully to avoid bitterness.
Return strained hot tea to the saucepan over low heat. Gradually whisk in 2 tsp unflavored gelatin powder until fully dissolved (do not boil).
Add 4 tbsp sugar and stir gently over low heat until the sugar completely dissolves, about 2 minutes.
Remove from heat and add 1 tsp lemon juice, stirring to combine. Let the mixture cool for 5 minutes so it's warm but not hot.
Pour the tea mixture evenly into serving cups or molds. Refrigerate for at least 2 hours, or until jelly is fully set and jiggles gently when touched.
