Cut a pocket, stuff it with goat cheese and sundried tomatoes, bake. This stuffed chicken looks gourmet but it's a straightforward low carb dinner anyone can pull off.
Preheat oven to 400°F (200°C). Lightly grease a baking dish with 1 tbsp olive oil.
Cut a deep pocket into the side of each chicken breast without cutting through. Season inside and outside with salt, pepper, and garlic powder.
In a small bowl, mix goat cheese, chopped sundried tomatoes, and fresh spinach until well combined.
Stuff each chicken pocket with the goat cheese mixture, gently pressing the filling in. Secure with toothpicks if needed.
Brush the top of each breast with remaining olive oil and sprinkle with dried oregano. Place in baking dish.
Bake chicken for 22–24 minutes until the center reaches 165°F (74°C) and the surface is golden. Rest 5 minutes before slicing to retain juices.
