In a large bowl, toss the shrimp with lime juice, smoked paprika, salt, and black pepper. Let marinate for 10 minutes to infuse flavor.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the peppers and onions; sauté for 5–6 minutes until softened with slight char.
