Dalma is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse the yellow split peas thoroughly under cold water and soak for 20 minutes; drain well.
In a medium pot over medium-high heat, add soaked dal, turmeric powder, salt, and 4 cups water. Bring to a boil, then reduce to medium heat and simmer uncovered for 15 minutes, skimming any foam.
Add potatoes, carrots, pumpkin, green beans, eggplant, and tomato to the pot. Cook on medium heat for 20–25 minutes until vegetables and dal are soft but not mushy.
In a separate small skillet, heat canola oil over medium. Add mustard seeds and cumin seeds; let them sputter for 30–45 seconds. Add dry red chili, curry leaves, and chopped fresh ginger; sauté for 1 minute until fragrant but not burned.
Pour the oil tempering into the dal-vegetable mixture. Stir in grated coconut (if using). Gently simmer everything together for 3–5 minutes to blend flavors, tasting and adding more salt as needed. Serve hot.
