Slow-cooked barbacoa prepared for baptism celebrations feeds large family gatherings. This high protein, family celebration dish is a fresh, traditional, carnivore centerpiece.
Soak the dried guajillo and ancho chiles in hot water for 20 minutes until softened, then remove stems and seeds.
Blend softened chiles, garlic cloves, onion, apple cider vinegar, oregano, cumin, salt, and water together until smooth to form the marinade.
Rub the beef chuck roast thoroughly with the marinade. Place the meat in a large Dutch oven or slow cooker and tuck bay leaves around.
Cover and cook on the lowest setting (low heat) for 6 hours (or in a 275°F oven for 5-6 hours), turning once halfway through for even cooking.
When the beef is fork-tender, shred it directly in the pot, mix well with pan juices, and simmer uncovered for 15 minutes to let excess liquid evaporate and flavors concentrate.
