Toast dried ancho chiles over medium heat for about 2 minutes per side, until fragrant and slightly softened.
Remove stems and seeds from the toasted chiles, then soak them in hot water for 10 minutes to soften further.
Drain chiles and add to a blender with garlic cloves and white onion, blending until a coarse paste forms.
