Creamy green pea soup blended smooth and seasoned with Mexican herbs. This vegetarian, healthy soup is rich in plant protein and makes a fresh, light family dinner starter.
Heat the olive oil in a large pot over medium heat. Add diced onion, celery, and carrot. Sauté, stirring occasionally, until the vegetables are softened and onions are translucent, about 7 minutes.
Add frozen green peas to the pot, stirring to combine. Pour in the vegetable broth and add the bay leaf. Increase the heat to bring the soup to a gentle boil.
Reduce to low heat, cover, and simmer for 15 minutes to infuse the flavors and fully cook the peas. Remove and discard the bay leaf.
Add chopped cilantro, epazote (if using), oregano, salt, and pepper. Stir well and simmer uncovered for 3 more minutes to meld the herbs.
Turn off the heat. Using an immersion blender, blend the soup until completely smooth and creamy. Taste and adjust seasoning if needed. Serve hot, garnished with extra cilantro if desired.
