Varan is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse the split yellow mung dal thoroughly in cold water until the water runs clear.
In a medium saucepan, combine mung dal, water, and turmeric powder. Bring to a boil over medium-high heat, then reduce to a simmer and cover.
Cook for 22–25 minutes, stirring occasionally to prevent sticking; cook until the lentils are soft and easily mashed.
Add salt and gently mash the cooked lentils to create a smooth consistency while simmering for another 2 minutes. Turn off the heat.
For the tempering, heat ghee in a small skillet over medium heat. Add cumin seeds and mustard seeds; let them sizzle and pop for 20 seconds.
Add asafoetida, green chili, and curry leaves to the skillet; sauté for 30 seconds on medium heat, then immediately pour the tempering over the cooked varan.
Stir well to combine tempering with the lentils. Serve hot, garnished with extra curry leaves if desired.
