Small red maguey worms toasted and served in tacos are a traditional Central Mexican delicacy. This high protein, keto-friendly snack is a bold, fresh option for adventurous carnivore diets.
Heat a large dry skillet over medium-high heat for 2 minutes until hot.
Add the chinicuiles to the dry pan. Toast for 3–4 minutes, stirring frequently, until crisp and fragrant. Transfer to a plate.
Wipe out the skillet, add olive oil, and return to medium heat. Quickly saute the toasted chinicuiles for 1 minute, seasoning evenly with sea salt and black pepper.
Warm the corn tortillas in the pan for about 30 seconds per side until soft and pliable, wrapping them in a clean towel to keep warm.
Assemble tacos: Fill tortillas with chinicuiles, top with diced white onion and fresh cilantro, and serve with lime wedges for squeezing.
