Scrub and debeard the mussels thoroughly under cold running water, discarding any that remain open after a tap.
Heat a large, wide pot over medium heat and add the olive oil. Once shimmering, add the minced garlic and red pepper flakes, sautéing for about 1 minute until just fragrant but not browned.
Pour in the dry white wine and bring to a boil over high heat.
