Simple and wholesome, Turai Sabzi is a traditional Indian vegetable curry that's light yet satisfying. This low-calorie vegetarian dish supports diabetic-friendly, DASH, and calorie deficit meal plans for the family.
Peel the turai (ridge gourds), rinse, and cut into 1/2-inch thick half-moons. Finely chop the onion, tomato, and green chili.
Heat 1.5 tbsp vegetable oil in a nonstick skillet over medium heat. Once hot, add cumin seeds and let them sizzle for about 30 seconds until aromatic.
Add chopped onions and sauté on medium-high heat for 3–4 minutes, stirring until translucent but not browned.
Add green chili, chopped tomato, turmeric powder, and coriander powder. Cook for 2–3 minutes until tomatoes soften, stirring to prevent sticking.
Add turai pieces and salt. Stir well, cover, and cook on low-medium heat for 15–18 minutes, stirring every 5 minutes to ensure even cooking and prevent excess moisture.
Remove the lid for the final 2–3 minutes to evaporate extra liquid, ensuring the sabzi is neither too watery nor too dry.
Check turai tenderness—when soft, turn off the heat and serve hot.
