Steamed cornbread wo tou is a cone-shaped, wholesome Northern Chinese staple. A vegetarian, healthy family bread with fresh, natural corn flavor.
Combine the cornmeal and all-purpose flour in a large mixing bowl, then stir in the salt and sugar until evenly distributed.
In a small bowl, dissolve the instant yeast in warm water (about 105°F to 110°F), then let rest for 3-4 minutes until bubbly.
Pour the yeast mixture and vegetable oil into the dry ingredients. Mix with a spatula until a sticky dough forms.
Knead the dough for 5-7 minutes on a lightly floured surface until smooth but still slightly tacky. Cover and allow to rise in a warm spot until doubled in volume, about 45-60 minutes.
Divide the risen dough into 6 portions. Shape each into a cone, gently pinching and smoothing to form the traditional wo tou cone shape. Place each cone onto a square of parchment.
Set shaped wo tou into a steamer, cover, and allow to rest 10 minutes for final proofing. Bring water to a full boil, then steam over high heat for 20-25 minutes.
After steaming, turn off the heat but leave the lid closed for 5 minutes before opening to prevent collapse. Cool slightly, then serve warm.
