Puffed amaranth bars bound with honey or piloncillo are a joyful Aztec-origin treat. This family-friendly snack is a naturally sweet, traditional confection rich in Mexican heritage.
Line an 8x8-inch pan with parchment paper and lightly oil the surface for easy removal.
In a large bowl, combine the puffed amaranth, pumpkin seeds, and dried cranberries. Set aside.
In a small saucepan over medium-low heat, combine the honey (or piloncillo syrup), cinnamon, and salt. Stir constantly until the mixture begins to bubble gently and thicken, about 3–5 minutes.
Immediately pour the hot syrup over the amaranth mixture. Using a silicone spatula, mix quickly and thoroughly to coat all the grains before it cools.
Press the mixture firmly and evenly into the prepared pan using lightly oiled hands or the back of a spoon to compact and level. Let rest at room temperature for 30–45 minutes or until fully set, then cut into bars.
