Heat the olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; sauté for 5–6 minutes until vegetables soften, stirring occasionally for even cooking.
Add minced garlic, dried thyme, ground cumin, and paprika. Stir constantly for 1 minute, just until the mixture is fragrant.
Add rinsed brown lentils, diced tomatoes (with juices), vegetable broth, bay leaf, salt, and black pepper. Stir well to combine.
Raise heat to high until the soup comes to a boil, then immediately reduce to low and simmer uncovered for 30–35 minutes, or until lentils are tender but not mushy. Skim off any foam if necessary.
Remove bay leaf. Stir in the baby spinach and cook for 2–3 minutes until wilted. Taste and adjust salt or pepper as desired before serving hot.
