Lay veal cutlets flat and gently pound to ¼-inch thickness for even rolling.
Place a slice of prosciutto, provolone, and a small handful of fresh spinach on each cutlet. Roll tightly and secure with toothpicks.
In a large skillet, heat olive oil over medium-high and sear all sides of the involtini for 2-3 minutes each, until lightly browned. Remove and set aside.
