Matka Kulfi is India's traditional dense, creamy frozen dessert made with slow-reduced milk and aromatic flavors. This beloved family treat is the perfect summer indulgence at celebrations and casual gatherings.
In a heavy-bottomed saucepan, pour 4 cups of whole milk and bring it to a gentle boil over medium heat, stirring continuously to prevent scorching.
Reduce the heat to low and simmer the milk, scraping sides frequently, until it thickens and reduces by half—this takes about 40–45 minutes.
Add sweetened condensed milk, heavy cream, and stir well. Let simmer for an additional 10 minutes for deeper creaminess.
Add sugar, cardamom powder, rose water, and saffron threads. Stir until the sugar dissolves and the mixture is aromatic.
Remove from heat, cool to room temperature, then fold in the chopped pistachios and almonds. Pour mixture into traditional matka (clay pots) or molds, cover, and freeze for at least 6–8 hours till set.
