Rinse the poha in a strainer under running water and drain completely. Set aside for 10 minutes to soften.
Heat mustard oil in a large skillet over medium flame until it starts to shimmer. Add cumin seeds and let them sizzle for 30 seconds.
Add finely chopped onion, ginger, and green chili. Sauté on medium-low heat for 3-4 minutes or until onions are translucent.
Stir in diced tomato, turmeric, red chili powder, garam masala, and salt. Cook for 2-3 minutes until tomatoes are soft.
Add the fresh green peas and sauté for 4-5 minutes until peas are just cooked but still bright green.
Fold in the drained poha; sprinkle sugar and gently mix everything together. Cook on low heat for 2-3 minutes, stirring gently to avoid breaking the poha.
Finish with a squeeze of lemon juice. Turn off heat, cover, and let the mixture steam for 2 minutes before serving.
