Cola-braised pot roast uses cola's sweetness to create a uniquely tender, caramelized beef roast. This high protein, carnivore-friendly family dinner is fall-apart tender and full of surprising depth.
Pat the beef chuck roast dry and season all sides with salt, black pepper, and paprika.
Heat oil in a large Dutch oven over medium-high heat. Sear the roast for about 4 minutes per side until deeply browned. Remove and set aside.
Add chopped onion, carrots, and celery to the pot. Sauté for 5 minutes over medium heat, stirring occasionally, then add minced garlic and cook 1 minute more.
Pour in the cola and beef broth, scraping the browned bits from the bottom. Return the roast to the pot, nestling it among the vegetables.
Bring to a simmer, then cover and transfer to a 325°F oven. Braise for 3 hours, flipping roast once halfway, until the beef is fork-tender and infused with the cola's caramel notes.
Uncover and roast for an additional 30 minutes to concentrate and thicken the sauce. Rest 10 minutes before slicing or shredding.
