Badam Ladoo is a classic Indian sweet made by shaping flavored dough into round, bite-sized treats. This beloved dessert is a staple at festivals, weddings, and family celebrations across India.
Dry roast the blanched almonds over medium heat for 4-5 minutes, stirring constantly until fragrant. Let them cool, then grind into a coarse powder.
In a heavy-bottomed skillet, add 2 tbsp ghee and the ground almonds. Toast gently over medium-low heat, about 2 minutes, until aromatic.
Stir in the desiccated coconut and cardamom powder, and continue to cook for 1 minute while maintaining low heat to prevent burning.
Add the sweetened condensed milk and saffron strands, mixing thoroughly. Cook, stirring constantly, on low heat for 6–8 minutes until the mixture thickens and leaves the sides of the pan.
Remove from heat and let the mixture cool for 7–8 minutes until just warm to touch. Grease your palms with a little ghee, then shape the mixture into small, firm balls. Let set and serve.
