Rinse the bean sprouts thoroughly under cold water and drain well to maintain crispness.
Slice the scallions thinly, separating the white and green parts.
Heat a large skillet or wok over high heat until just shimmering, then quickly add the vegetable oil.
Add the white part of the scallions and stir-fry for 10 seconds before immediately adding the bean sprouts.
Stir-fry the bean sprouts for 60–90 seconds on high heat, tossing constantly to prevent moisture pooling.
Drizzle in the soy sauce, sea salt, and white pepper, and stir rapidly for another 20 seconds, being careful not to overcook.
Remove from heat, finish with sesame oil and the green scallion tops, tossing to combine before serving immediately.
