Pat grouper fillets dry and season with salt and black pepper; let them rest at room temperature for 10 minutes.
Heat 2 tbsp olive oil in a large skillet over medium-high. Sauté onions until translucent, about 4 minutes.
Add tomatoes, olives, and capers; cook, stirring occasionally, until tomatoes begin to break down, 7–8 minutes.
Pour in white wine, simmer briskly for 3 minutes to reduce, then lower heat to medium. Add remaining olive oil.
Nestle grouper fillets in the sauce; cover and cook gently for 6–8 minutes, turning once, until fish flakes easily. Finish with parsley and serve hot.
