Savory diced pork and fluffy eggs are tossed with rice over blazing wok heat for a hearty, satisfying meal. This protein-packed family favorite is perfect for using leftovers and fueling a busy day.
Cut the pork loin into small, bite-sized cubes. Thinly slice the green onions and finely dice the carrot. Set out your peas to thaw if frozen.
Heat a wok or large skillet over medium-high heat until very hot, then add 1 tablespoon of vegetable oil. Add the pork cubes and stir-fry for 3–4 minutes until browned and cooked through. Transfer to a plate.
Add another tablespoon of vegetable oil to the wok. Crack in the eggs, scramble gently until just set but still soft, and then push them to the side.
Increase to high heat. Add garlic, carrots, and peas; stir-fry briskly for 1 minute, then add the cooked rice, breaking up any clumps and tossing well to mix with the vegetables.
