Broccoli sautéed with garlic and chili in olive oil, Roman-style. This vegetarian mediterranean side is fresh, healthy, and a clean eats family staple rich in vitamins and fiber.
Trim and wash the broccoli florets thoroughly. Slice the garlic cloves thinly.
Bring a pot of salted water to a boil. Blanch the broccoli florets for 2 minutes, then drain and pat dry.
Heat the olive oil in a large skillet over medium heat. Add sliced garlic and sauté until fragrant and just golden, about 1 minute. Stir constantly to avoid burning.
Add chili flakes to the skillet, immediately followed by the blanched broccoli. Toss well to coat with oil and aromatics.
Season with salt and black pepper. Sauté for an additional 4–5 minutes, stirring occasionally, until broccoli is tender but still vibrant and slightly crisp. Serve warm.
