In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, dill pickle juice, paprika, garlic powder, and onion powder to make the signature burger sauce. Cover and chill while prepping the patties.
Divide the ground beef into 8 equal balls (about 3 oz each) for true double-smash burgers. For best texture, keep the beef cold until smashing and do not overwork.
Heat a large cast iron skillet or griddle over medium-high heat until very hot (you should see faint wisps of smoke). Brush with a small amount of butter.
