Soak the bamboo fungus and dried shiitake mushrooms separately in warm water for 30 minutes until fully rehydrated, then drain thoroughly.
Slice the chicken breast thinly across the grain for optimal tenderness. Cut the shiitake mushrooms and carrot into thin slices for even cooking.
In a soup pot, add 5 cups water and bring to a simmer over medium heat. Add the chicken, mushrooms, carrot, and scallion whites (reserve green tops for garnish). Skim off any foam to keep the broth clear.
After 15 minutes, add the soaked bamboo fungus. Reduce heat to low and gently simmer uncovered for an additional 30 minutes to infuse flavors without clouding the broth.
