Heat the samosas in a preheated oven at 350°F for 10–12 minutes until crisp, or air-fry for 5–6 minutes. Cool slightly before assembling.
Whisk the yogurt until smooth and creamy; set aside. If using canned chickpeas, rinse and drain well.
On each serving plate, break a warm samosa into large chunks and layer as a base.
Top with boiled potato cubes and chickpeas, followed by a generous drizzle of whipped yogurt.
Spoon over tamarind and green chutneys. Sprinkle finely chopped onion, tomato, and cilantro evenly.
Season with chaat masala, roasted cumin powder, black salt, regular salt, and optional red chili powder.
Finish with a layer of sev and scatter pomegranate arils on top for crunch and freshness.
Serve the chaat immediately to preserve texture and enjoy while the samosas are still warm.
