Rinse the eel, then cut it into 2-inch chunks. Pat dry to remove excess moisture for proper roasting.
Heat the olive oil over medium heat in a roasting pan, then add onion, celery, and carrot. Sauté for 5 minutes to soften.
Increase heat slightly and stir in the eel pieces, turning to brown each side for about 5 minutes.
Pour in the white wine and allow it to evaporate for 2-3 minutes, then add tomatoes, bay leaves, salt, and pepper.
Cover and roast or stew at gentle simmer for 30 minutes, stirring occasionally. Finish with chopped parsley and check eel tenderness before serving.
