Round, dense cookies made with piloncillo and cinnamon are a rustic Mexican sweet. This family-friendly treat is a hearty, traditional, spiced cookie of rural Mexican baking.
Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
Melt the butter gently in a saucepan over low heat, then add the grated piloncillo. Stir constantly until the piloncillo dissolves, then remove from heat and let cool for 10 minutes.
In a large bowl, whisk flour, ground cinnamon, baking powder, and salt together until evenly blended.
In a separate bowl, beat the eggs, then add the cooled butter and piloncillo mixture and milk. Mix well until fully combined.
Gradually fold the wet ingredients into the dry mixture, stirring to create a thick, slightly sticky dough. Do not overmix.
Scoop out 2-tablespoon portions of dough, roll into balls, and place them spaced apart on the prepared baking sheets.
Bake for 18–20 minutes, rotating the sheets halfway, until the cookies are puffed, set, and lightly browned on the bottoms.
Cool the trompadas on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely for best texture.
