Creamy milk fudge from Mexico is a smooth, melt-in-your-mouth traditional confection. This family-friendly treat is a sweet, delicate, old-fashioned candy of Mexican heritage.
In a heavy-bottomed saucepan, combine whole milk and granulated sugar over medium heat, stirring until sugar dissolves completely.
Add unsalted butter and a pinch of salt. Bring the mixture to a gentle boil, then reduce the heat to low and continue to cook, stirring frequently to prevent sticking.
Simmer gently, stirring constantly as the mixture thickens and turns a light caramel color, about 45 minutes. Watch the heat so the milk does not scorch.
When the mixture reaches a soft fudge consistency (test by dropping a small amount in cold water; it should form a soft ball), remove from heat and stir in vanilla extract.
Quickly pour the mixture into a buttered 8-inch square pan, smooth the top, and allow to cool at room temperature. Once set, cut into small squares for serving.
