Heat vegetable oil in a large skillet over medium-high heat. Fry fish pieces in batches for 2-3 minutes per side until golden and cooked through. For a lighter option, grill the fish on a hot grill for 2-3 minutes per side.
Warm the corn tortillas in a dry skillet or directly over a gas flame for 30 seconds each side.
