Warm, fragrant, and indulgent, Karachi Halwa is a classic Indian halwa that melts in your mouth. This cherished family dessert is prepared during festivals, religious occasions, and winter celebrations.
In a heavy-bottomed pan, combine 1 cup cornstarch with 2 cups water. Whisk well until smooth, with no lumps.
In a separate pan, dissolve 2 cups sugar in 0.5 cup water over medium heat. Stir continuously until the sugar fully dissolves and the syrup just comes to a boil.
Gradually pour the hot sugar syrup into the cornstarch mixture, whisking constantly to prevent lumps.
Turn the heat to medium-low, and cook the mixture while stirring non-stop. When it starts thickening and turns glossy, add 1/4 cup ghee a tablespoon at a time, allowing each addition to be fully absorbed before the next.
Once the mixture pulls away cleanly from the sides and looks almost jelly-like, stir in lemon juice, cardamom powder, orange food color, and cashew nuts. Mix well and cook for 2 more minutes over low flame.
Pour the hot halwa into a greased tray, spread evenly, and let it cool at room temperature for at least 2 hours before cutting into pieces.
