Kuttu Ki Roti is a traditional Indian flatbread that's a healthy, whole-grain staple of everyday meals. This simple vegetarian bread is low in calories and the perfect family dinner accompaniment to any curry.
In a large mixing bowl, mash the boiled potato until smooth.
Add buckwheat flour and salt to the mashed potato, mixing well to combine.
Gradually add water and knead the mixture into a soft, pliable dough. Rest the dough for 10 minutes, covered with a damp cloth.
Divide the dough into 4 equal portions. Using your hands, gently pat or roll each portion between parchment or plastic sheets to form 5-inch round rotis, about 1/4 inch thick.
Heat a nonstick skillet or tawa over medium heat. Place one roti on the hot surface. Cook for 1-2 minutes until bubbles form, then flip and brush with a little ghee. Cook the other side until golden spots develop, managing heat to avoid burning. Repeat with remaining dough.
Serve hot Kuttu Ki Roti immediately, brushed with a touch of ghee, alongside your favorite curry or yogurt.
