Soft, spongy, and perfectly sweetened, Rajbhog Sweet is a signature Bengali confection known worldwide. This cherished family dessert is essential at pujas, weddings, and festive occasions.
Heat 8 cups of whole milk in a heavy-bottomed pot over medium flame, stirring occasionally to prevent burning.
Once it comes to a gentle boil, turn off the heat and slowly add 3 tbsp lemon juice, stirring until the milk curdles and the whey separates.
Strain curds through a cheesecloth, rinse under cold water to remove lemon flavor, and squeeze out excess moisture (do not let it dry out completely).
Transfer the fresh chenna (paneer) to a plate, knead for 8-10 minutes until smooth, then mix in 2 tsp refined flour for texture.
Divide the dough into 6 equal balls; stuff each with a mixture of chopped pistachios, almonds, cardamom powder, and a few saffron strands. Seal and roll each ball until smooth.
In a wide pot, dissolve 2 cups sugar in 7 cups water, bring to a rapid boil on high heat, then gently add the stuffed balls.
Cover and cook on high heat for 18–20 minutes, ensuring space to expand; balls will double in size and must remain submerged for even cooking.
Turn off heat, rest for 10 minutes (covered), then add 1 tbsp rose water to the syrup for delicate fragrance.
Let the Rajbhog cool to room temperature in the syrup, then refrigerate at least 2 hours before serving for best texture.
Serve chilled, garnished with extra pistachios and a few saffron strands drizzled with syrup.
