Misti Doi is a beloved Bengali sweet crafted from fresh chhena and soaked in aromatic syrup. This iconic dessert is a highlight of family celebrations and a pride of Bengali culinary tradition.
Pour whole milk into a heavy-bottomed saucepan and bring to a gentle boil over medium heat, stirring frequently to prevent scorching.
Reduce the milk to about 3 cups by simmering for 20–25 minutes, stirring occasionally. Ensure no skin forms on the milk.
In a small pan, heat sugar on medium, swirling occasionally until it melts and turns caramel gold; immediately add to the reduced milk and mix well.
Cool the sweetened, caramelized milk until just warm but not hot (about 110°F). Stir in sweetened condensed milk and crushed cardamom.
Gently whisk in plain yogurt, then pour the mixture into an earthenware or glass bowl. Cover and let it ferment undisturbed in a warm place for 6–8 hours until set and slightly tangy.
Chill the set Misti Doi in the refrigerator for at least 4 hours before serving for best texture and flavor.
