Pan-seared beef steak smothered in a rustic tomato, onion, and jalapeño ranchero sauce. High in protein and full of fresh flavors, this family favorite fits a carnivore or calorie deficit approach.
Pat the beef steaks dry and season both sides with kosher salt and black pepper evenly.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear the steaks for 2–3 minutes per side until well-browned but not cooked through; remove and set aside.
Reduce the heat to medium. Add remaining 1 tbsp olive oil to the pan, then sauté sliced onion, jalapeño, and garlic for 3–4 minutes until fragrant and just softened.
Add chopped roma tomatoes and ground cumin, stirring well. Allow the sauce to simmer for 8–10 minutes, stirring occasionally, until tomatoes break down and sauce thickens.
Return the seared steaks to the skillet, nestling them in the sauce. Cover and simmer on low for 8–10 minutes until steaks are just cooked through but still tender. Taste and adjust seasoning before serving.
