Misal Pav Curry brings together lentils and traditional Indian spices for a comforting, protein-packed meal. This affordable vegetarian dish is a healthy family favorite that fits into any calorie-conscious plan.
Heat 2 tbsp vegetable oil in a deep pan over medium heat. Once hot, add mustard seeds and cumin seeds; let them sizzle and pop for 30 seconds.
Add finely chopped onion and sauté until golden brown, stirring frequently to avoid burning, about 6–8 minutes.
Add chopped tomatoes, turmeric powder, and red chili powder. Cook on medium heat until the tomatoes soften and oil separates, about 5 minutes.
Mix in the boiled, cubed potato, sprouted moth beans, and misal masala. Stir well to coat everything evenly with spices.
Pour in 3 cups of water, add salt, and simmer uncovered for 15–20 minutes on medium-low heat, allowing flavors to meld and the curry to thicken slightly.
Check seasoning and consistency, then finish with fresh chopped cilantro. Serve hot with lightly toasted pav bread rolls on the side.
