Soak dried yellow peas overnight in water, then drain and rinse before use.
In a saucepan, combine soaked peas, cubed potatoes, water, salt, and turmeric. Bring to a boil over medium-high heat, then reduce to low and simmer covered for 30–35 minutes until beans are soft.
Stir in chaat masala, cumin powder, garam masala, red chili powder, tamarind pulp, and jaggery. Simmer uncovered on medium heat for 5–7 minutes, stirring until thick and fragrant.
Arrange puffed puris in serving plates. Gently crush them to create a base layer, then ladle the hot peas-potato mixture generously over them.
