Pumpkin slow-cooked in piloncillo syrup with cinnamon is a Day of the Dead staple. This vegetarian, family tradition is a naturally sweet, comforting dessert of the fall season.
Place pumpkin wedges, skin-on, into a large heavy pot arranged evenly.
Add piloncillo (or brown sugar), cinnamon sticks, cloves, and optional orange zest on top of the pumpkin.
Pour the water around the pumpkin, ensuring pieces are partially submerged but not floating.
Bring to a boil over medium-high heat, then immediately reduce to a gentle simmer. Cover and cook for 30 minutes.
Uncover and simmer for an additional 60–90 minutes, basting occasionally with syrup and adjusting heat to maintain a gentle simmer. Cook until the pumpkin is deeply colored, tender, and the syrup is thickened.
Serve warm or at room temperature with generous spoonfuls of syrup.
