Stuffed focaccia with layers of cheese, vegetables, or cured meats makes a complete mediterranean meal. A family-friendly bread that's versatile enough for any high protein filling.
In a large bowl, mix bread flour and kosher salt. In a measuring cup, combine warm water and instant yeast, letting it sit for 5 minutes to activate.
Add the yeast mixture and olive oil to the dry ingredients. Mix by hand or with a stand mixer on medium speed for 7–8 minutes until a smooth, elastic dough forms.
Coat a clean bowl with olive oil, place the dough in, cover, and let rise in a warm spot for 60 minutes or until doubled in size.
Preheat the oven to 400°F (200°C). Divide the dough in half. Roll one half out to fit a 9-inch greased baking pan, pressing into the edges. Sprinkle half the dried oregano over the base.
Layer the smoked turkey breast, roasted peppers, and mozzarella cheese evenly over the base. Finish with remaining oregano and half the black pepper.
Roll out the second half of dough to cover the filling. Place over the top, pinching the edges to seal well. Brush with a little olive oil, sprinkle with remaining black pepper and a pinch of kosher salt.
Bake for 28–32 minutes on the middle rack until deep golden brown and cooked through. Cool in the pan for 10 minutes before slicing and serving.
