Scrambled eggs with diced potatoes are a comforting, filling Mexican breakfast staple. This high protein, family-friendly dish is a fresh, healthy, budget-friendly option for busy mornings.
Peel and dice the potatoes into 1/2-inch cubes. Rinse well in cold water to remove excess starch.
Heat 2 tbsp canola oil in a large nonstick skillet over medium heat. When oil shimmers, add diced potatoes and cook, turning occasionally, for 8–10 minutes until golden and just tender.
Add finely chopped onions to the skillet with the potatoes. Season with half the salt and pepper. Cook 3–4 minutes, stirring occasionally, until onions are soft and translucent.
While potatoes and onions cook, crack eggs into a bowl, add remaining salt and pepper, and beat until fully combined.
Reduce the heat to medium-low. Pour the eggs evenly over the cooked potatoes and onions. Let cook, undisturbed, for 30–45 seconds, then gently stir and fold until eggs are softly scrambled and just set, 3–4 minutes.
Remove from heat immediately to avoid overcooking. Garnish with chopped cilantro if desired. Serve warm.
