Thick, hand-formed corn masa cakes from the Huasteca region are stuffed with beans or cheese. This vegetarian-friendly, family dish is a healthy, fresh antojito with rustic charm.
In a large bowl, mix masa harina, salt, and warm water until a soft, pliable dough forms. Rest for 5 minutes to allow full hydration.
Divide dough into 8 equal portions and roll them into balls. Cover with a towel to prevent drying.
Flatten each ball into a thick disk (about 1/2 inch thick). Place about 1 tablespoon of refried beans or crumbled queso fresco in the center of each disk.
Fold edges over filling, pinching to seal. Gently flatten the stuffed cake again, keeping the filling inside and cakes about 1/2 inch thick.
Heat 2 tablespoons vegetable oil in a nonstick skillet over medium heat. Cook bocoles in batches for 3–4 minutes per side, flipping once, until golden-brown and heated through.
Transfer cooked bocoles to a plate lined with paper towels. Serve hot, optionally with salsa or fresh herbs.
