A traditional Yucatecan Monday dish of pork simmered with black beans and served with fresh garnishes. This protein-packed, family meal is a healthy, satisfying comfort food staple.
Rinse and soak the dried black beans overnight in plenty of cold water.
Drain beans, then add to a large Dutch oven with pork shoulder (cut into large chunks), bay leaves, half the onion (quartered), and peeled garlic; cover with water by 2 inches.
Bring to a gentle boil, skimming surface foam, then reduce heat to low and simmer partially covered for 2.5 to 3 hours until beans are very tender and pork is fork-tender.
Remove pork pieces to a cutting board; shred or chop into bite-sized chunks. Discard bay leaves. Season beans and broth with salt and black pepper.
Slice remaining raw onion thinly; slice radishes and chop cilantro. Return pork to pot. Serve in bowls topped with fresh onion, radish, cilantro, and a squeeze of lime.
