1. Prepare the fresh mullet fish by rinsing and patting dry, then stuff each cavity with half of the parsley.
2. Preheat your grill to medium-high heat and brush the grates with olive oil to prevent sticking.
3. Season the mullet inside and out with sea salt and black pepper, then drizzle with 2 tbsp olive oil.
4. Place the mullet on the hot grill and cook for about 6–8 minutes per side, turning once, until the flesh is firm and grill marks have developed.
5. Remove from grill, drizzle with the juice of both lemons and remaining olive oil, garnish with extra parsley, and serve immediately.
