Palakura Pappu is a nourishing Indian lentil dish cooked with aromatic spices and a flavorful tempering. This high protein vegetarian staple is DASH-friendly, budget-conscious, and perfect for healthy family meals.
Rinse toor dal thoroughly, drain, and add to a pot with water, turmeric, and 1/2 tsp salt. Bring to a rolling boil, then simmer on medium-low for 25–30 minutes until dal is soft.
In a skillet, heat 1/2 tbsp oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes.
Add tomatoes, green chili, and garlic to onions; cook for another 4 minutes, stirring until tomatoes soften.
Stir chopped spinach into the onion-tomato mixture and cook for 3–4 minutes, just until wilted. Avoid overcooking so spinach stays bright green.
Combine the cooked dal and spinach mixture. Simmer together for 5–7 minutes on low, adjust salt to taste, and mash gently for a creamy consistency.
For tempering: Heat 1 tbsp oil in a small pan over medium-high. Add mustard seeds and cumin seeds; when they splutter, add dried red chili, curry leaves, and asafoetida. Sizzle for 20 seconds, then pour immediately over the dal.
Mix well and serve Palakura Pappu hot with rice or roti.
