Hyderabadi biryani is the crown jewel of Indian rice dishes, featuring dum-cooked layers of spiced meat and fragrant basmati. This iconic high protein dish is a must-have for family celebrations and special occasions.
Rinse the basmati rice in cold water until the water runs clear. Soak the rice for 30 minutes, then drain and set aside.
In a large bowl, marinate the chicken thighs with yogurt, half the ginger garlic paste, red chili powder, coriander, cumin, 1 tsp salt, lemon juice, and half the chopped mint and cilantro. Cover and refrigerate for at least 1 hour.
Heat 2 tbsp ghee in a heavy-bottomed pot over medium heat. Add bay leaves, cinnamon stick, cloves, and cardamom pods; sauté for 1 minute. Add sliced onions and cook, stirring often, until deep golden brown. Reserve half the fried onions for layering.
Incorporate the marinated chicken into the pot with the onions and remaining ginger garlic paste. Sauté on medium-high heat for 7–8 minutes, then reduce heat to low. Cook covered for 20 minutes, allowing the chicken to release juices and become infused with spices.
While chicken cooks, boil soaked rice in plenty of salted boiling water until 70% cooked (rice should break with slight pressure). Drain immediately to prevent overcooking.
Warm milk and steep saffron threads in it for 10 minutes to extract color and aroma.
Preheat oven to 350°F (or prepare a heavy lid for stovetop dum). Layer half of the par-boiled rice over the cooked chicken, then sprinkle with reserved fried onions, remaining mint and cilantro, and half the saffron milk. Repeat with the rest of the rice and finish with saffron milk and a drizzle of ghee.
Seal the pot tightly with foil and lid (or dough), and cook in the oven (350°F) for 30 minutes or on a low flame for 30–35 minutes to dum-cook. Let rest 10 minutes before opening.
Gently fluff the biryani with a wide spoon, lifting from the bottom to keep the layers intact. Serve immediately.
