Heat olive oil in a large Dutch oven over medium-high heat. Brown the chicken thighs skin-side down for 5-6 minutes until deep golden; remove and set aside.
Reduce heat to medium. Add diced onion and bell pepper; sauté, stirring often, until softened and lightly caramelized, about 8 minutes.
Stir in minced garlic, ancho chile powder, cumin, oregano, and black pepper; cook for 1 minute until fragrant.
Return chicken to the pot. Scatter prunes over and pour in water. Season with salt.
Bring to a simmer, then reduce heat to low. Cover and braise for 40-45 minutes, flipping chicken halfway, until meat is tender and sauce is thickened.
Taste and adjust salt if needed. Serve chicken with plenty of sauce spooned over top.
