Silky creamy tomato basil soup made with ripe tomatoes and fresh basil is a vegetarian classic everyone loves. Pair with grilled cheese for a fresh, family-friendly lunch that feels like a warm hug.
Heat olive oil in a large pot over medium heat until shimmering. Add chopped onion and sauté for 3–4 minutes until translucent.
Add minced garlic and cook for 1 additional minute, stirring frequently to prevent scorching.
Add chopped ripe tomatoes, salt, pepper, and sugar. Cook on medium-high heat for 7–8 minutes, stirring occasionally, until tomatoes begin to break down and release juice.
Pour in vegetable broth. Bring to a gentle simmer, reduce heat to low, and cook uncovered for 15 minutes. Stir occasionally to prevent sticking.
Turn off heat and blend soup with an immersion blender until smooth and creamy. Stir in heavy cream and torn basil. Simmer gently for 2–3 minutes on low heat; do not boil.
Taste and adjust seasoning if needed. Serve hot, optionally garnished with a fresh basil leaf.
