Hearty celebration braised noodles with rich, savory sauce and protein toppings are a family feast. A high protein dish with fresh, comforting flavor.
Prep all ingredients: thinly slice chicken thigh and mushrooms, cut carrot into matchsticks, halve baby bok choy, and mince garlic for even cooking.
Bring a pot of water to a boil; cook dried noodles for 2 minutes less than package instructions. Drain, toss with 1 tsp sesame oil, and set aside to prevent sticking.
Heat 1 tbsp canola oil in a deep skillet over medium-high; sear chicken slices until just cooked (about 2–3 minutes) and remove to a plate.
In the same skillet, add garlic and mushrooms; stir-fry for 2 minutes over medium heat, then add carrot and bok choy. Stir for another 2 minutes until fragrant.
Return chicken to the pan. Add soy sauce, oyster sauce, sugar, pepper, and pour in chicken broth. Bring to a boil, then reduce to medium-low and simmer 5 minutes to meld flavors.
Mix cornstarch with 2 tbsp water to form slurry. Pour into simmering sauce, stirring gently. When sauce thickens, add noodles and gently toss to coat evenly. Cook for 1–2 minutes on low to let flavors absorb.
Finish with remaining sesame oil, serve hot in a large platter, garnished with extra scallions if desired.
